Ingredients
Olive or avocado oil
Small onion, diced
1 lb ground beef (turkey works too)
2 Tbsp taco seasoningÂ
14 oz salsa
14 oz black beans, drainedÂ
1 cup rice, rinsedÂ
1 3/4 cup beef broth (sub chicken broth or water)
Toppings of your choice - we like cheese, plain Greek yogurt, and of course MIGROGREENS! Make it your way- Broccoli for mild taste, Arugula for spice, or cilantro for authentic.Â
Preparation
This is a one pot meal if you use a pressure cooker (Instapot type)
Set pot to sauté, add oil to cover bottom of pot. Add diced onion, sauté 2-3 minutes, add ground beef and cook until browned, drain. Next add remaining ingredients and stir to blend. Lock and seal pot lid. Set pot function to pressure and timer to 10 minutes. To finish, release steam completely, open, stir, and spoon into serving dish. Add toppings and enjoy!
